Question: Do frozen veggies have same nutritional benefits!?
I love vegetables, but whenever I buy them fresh I never use them all because of my busy schedule so I end up just wasting them!. Do frozen veggies have any less nutritional benefits than fresh!?Www@FoodAQ@Com

good question but somewhat hard to answer because it depends of the nutrients you are interested in!. In general there will be a loss of nutrients upon freezing and thawing but usually not very significant!. For example the fat soluble vitamins will be very little affected by freezing!. The water soluble vitamins like vitamin c will show some loss!. Of course the minerals, and phytochemicals are little affected!. But frozen vegetables are still a good nutritional source!.

One thing you should be aware of is that commerically and even in the home if you plan on freezing raw vegetable you should blanch them first!. (check any old time cookbook) That's because there are certain enzymes that will degrade the vegetable including flavor and nutrition if they are not inactivated!.

but stores defrost foods and refreeze all the time!. and your freezer's temperature is not enough to keep foods fresh!.Www@FoodAQ@Com

Often they have more!. They are processed within hours of harvest!.

Fresh veggies can travel hundreds of miles, and in the States thousands, and often handled frequently!.Www@FoodAQ@Com

Frozen vegetables don't have any less nutritional benefit than fresh, it's more about how the vegetables are prepared!.

Boiling them is the worst, most of their nutrients are leeched into the water!.

Steaming is next worst for the same reason

Microwaving, believe it or not, is the best because it doesn't let the nutrients in the vegetables seep into any other medium!.

Freezing, however, won't affect it regardless of what the health food wierdos say!.Www@FoodAQ@Com
