Whats a perfect side dish for meatloaf?!

~*~I prefer Scalloped potatoes to mashed potatoes because then the consistency and texture of the potatoes and the meat loaf are not the same!.
Scalloped Potatoes
5 large potatoes, peeled and thinly sliced
1 small to medium onion thinly sliced
3 tablespoons butter or margarine
1/4 cup all-purpose flour
2 cups of milk
3/4 teaspoon salt
1/8 teaspoon pepper
1!. In a greased 2-1/2-qt!. baking dish, layer potatoes and onion!.
2!. In a saucepan, melt the butter; stir in flour until smooth!. Gradually add milk salt and pepper; cook and stir for 2 minutes or until thick and bubbly!. Pour over potatoes!. Sprinkle with paprika!.
3!. Cover and bake at 325 degrees for 1 1/2 hours or until tender!.
To speed up the process I boil my sliced potatoes and onions until they are almost cooked and then place them into my baking pan, top with the sauce and bake for 30 minutes!.Www@FoodAQ@Com

Cheesy Hashbrown Casserole
Ingredients
1 (2 lb) package frozen hash brown potatoes, thawed
1 cup melted butter
1 (10 3/4 ounce) can condensed cream of chicken soup (you can also sub cream of mushroom)
12-16 ounces shredded cheddar cheese, to taste
1 (8 ounce) container sour cream
1 teaspoon salt
1/2 yellow onion, diced
2 cups cornflake cereal, crushed
Directions
1 Preheat oven to 350°F Lightly grease one 13x9 baking dish!.
2 Place thawed potatoes in bottom of prepared dish!.
3 In a separate bowl combine: 1/2 cup of the melted butter, condensed soup, cheese, sour cream, salt, and onion!. Mix well and spread over potatoes!.
4 Top evenly with crushed cornflakes and drizzle the remainined 1/2 cup of melted butter!.

We have meatloaf at least 3x a week!. These are the norm for us mashed potatoes (to change things up I add ranch dressing for some of the milk when mixing) and green beans (no salt because the seasoning has salt) seasoned with Goya ham flavoring!. Or we have cut up potatoes and carrots cook with the meatloaf!.Www@FoodAQ@Com
Mashed potatoes! The soft consistency is the same as the meat loaf, plus any juices are a natural gravy for the potatoes!. The white color is complimentary to the main dish!.
