Has anyone ever heard of Cucumber Spaghetti?!
A friend of mine has a little boy that has seizures and this is a new recipe on his special diet!.!.!.I need to know if you can buy "cucumber spaghetti" or if you have to make it some way your self!?Www@FoodAQ@Com

All cucumber spaghetti is is thinly sliced cucumber!. here is a recipe
* 2-4 cucumbers
* 125 ml (1/2 cup) olive oil
* 2 tbsp!. Dijon mustard
* 2 tbsp!. grainy Meaux mustard
* 1 tsp!. maple syrup
* 1 minced shallot
* 2 bunches of dill, chopped
Method
Preparation
1!. Cut the cucumbers in half; remove the seeds; leave the peel on;
2!. shred into thin 'spaghetti' using a food processor or a mandoline;
3!. prepare the vinaigrette: place the mustards in a bowl; mix in the maple syrup and gradually whisk in the olive oil; add the dill and shallot;
4!. add the cucumber to the dressing at the last minute so it stays crisp; combine well so that the cucumber strands are well coated with the dressing;
Serve
There is also a vegetable called a spaghetti squash which is fantastic!.Www@FoodAQ@Com
