Answers:
The acid in the lemon causes the casein proteins in the milk to denature!.

When casein proteins denature they spread out and then bond with other proteins in the milk!. This causes the milk to curdle and 'break'!.Www@FoodAQ@Com

I think because of the acid in lemon!.Www@FoodAQ@Com

Maybe it's 'cuz the lemon is acidic and the milk is basic or in the middle!. (pH)Www@FoodAQ@Com

well as moms told, since lemon is sour, it will make the milk go bad!. have you ever left milk out for a few days, and noticed how it goes bad, put lemon in milk, and it wud really fasten up the process!.
also, my mom use to say not to consume milk and lemons at the same time especially in large quantitesWww@FoodAQ@Com

bcoz lemon is acid & it'll convert milk into curd!.Www@FoodAQ@Com
