Question: Angel Food Cake -- Oil the Pan!?
Angel food cake recipes always say don't oil the pan!. Well, I have a terrible time getting it out of the pan!. I don't have a tube pan, I use a 3-inch deep, 9-inch wide baking pan!. It's exactly the right size, it doesn't overflow!. What would happen if I oiled the pan a little!? I know I should get a tube pan but I just don't have ANY extra money now!. Can anybody give me a "make do" solution for now!?Www@FoodAQ@Com

According to Alton Brown from the show Good Eats!.!.!. you don't oil the pan!. If you do, the angel food cake will not rise!.

The cake sticking to the sides holds up the cake as it rises!. Oiled sides will mean your cake has nothing to hold onto!.

After the cake is cooled, try running a toothpick along the side to release the cake!. For the bottom, cut a small circle of parchment paper and lay that in before you pour in the batter!.Www@FoodAQ@Com

The angel food cake rises and climbs up the side-walls of the pan!. If you oiled it, it wouldn't grip the sides, and therefore wouldn't rise against the pan!. I think it will still rise in the middle, though!. Just not near the sides!.

What if you only oiled the bottom of the pan (or a piece of parchment)!? Then the bottom would be clean, but it could still rise up the sides!. When the cake is cooled, run a butter knife around the edge to get it loose, and take it out!. If you clean the pan right away, it will be easy, because it won't be dried on!.Www@FoodAQ@Com

If you don't mind not making it from scratch I have a good one!. Get yourself a box mix of angel food cake, mix in nothing else except for 1 can (around the 14 1/2oz or so size) of crushed pineapple!. Mix it all up then cook as instructed!. Tastes awesome!Www@FoodAQ@Com
