4 cups half-and-half
1 cup sugar
1 (10-ounce) package frozen coconut, thawed
Pinch salt
5 egg yolks
In a non-reactive saucepan, combine the half-and-half, sugar, coconut, and salt, over medium heat!. Bring the cream to the boiling point and scald it!. Remove from the heat!. Beat the egg yolks in a bowl!. Add the cream mixture, about 1/4 cup at a time, to the beaten eggs, whisking in between each addition, until all is used!.
Pour the mixture into a saucepan, and cook, stirring, over medium heat, for 2 to 3 minutes, or until the mixture becomes thick enough to coat the back of a spoon!. Remove from the heat and cool completely!.

Grilled Pineapple Sandwiches with Frozen Coconut/Pineapple Yogurt
3 cups plain yogurt (750ml)
3 cups frozen pineapple (750ml)
1 tsp vanilla (5ml)
1 cup coconut (250ml)
2 tbsp corn syrup (30ml)
8 slices pineapple, peeled and cored
Directions:
Preheat oven to 350F/180C!.
Spread coconut on a baking sheet!. Place in center of oven and bake for 5 minutes, or until golden brown!. Reserve 1/3 cup for garnish!.
Place yogurt, pineapple and vanilla in bowl of food processor!. While machine is running add corn syrup!. Process to a smooth consistency!. Remove and place in bowl and stir in toasted coconut!.
Serve immediately or place in a freezer container and freeze!. Remove from freezer 10 minutes before serving!.
Prepare grilled pineapple using a grill pan, BBQ or inside grill!. Place pineapple slices on grill and cook until grill marks appear!. Turn and cook until heated through!.
Assemble sandwiches!. Scoop frozen yogurt onto one pineapple slice and top with additional slice!. Repeat!. Garnish with reserved toasted coconut!.

This calls for coconut macaroon cookies, but you could probably substitute about 2 c!. coconut (toasted would be good)

2 doz!. coconut macaroon cookies
1 pt!. whipping cream
1/2 tsp!. vanilla
1 Tb!. sugar
1 c!. chopped pecans
1 qt!. raspberry sherbet (slightly softened)
Break macaroons into small pieces; add pecans!. Whip cream until stiff, adding vanilla & sugar!. Fold macaroons & nuts into the whipped cream!. Layer half of cream mixture on bottom of 12" square pan!. Spread sherbet on top; top with remaining macaroon mixture!. Freeze until set!. Cut into squares and serveWww@FoodAQ@Com
