Roast beef? rainbow effect?!


Question: Roast beef!? rainbow effect!?
why does roast beef sometimes look like it has that shiny rainbow effect on it like oil has been spilled in water (im not sure if you know what i mean) for example on sliced roast beef if you look at it in light it looks like it has shiny pink, or green reflecting off of it!? i mean it shouldnt be from the oil because pork is fattier than roast beef etc, why does it happen!?
(i was going to get some sliced beef from the shop and it all had that shiny rainbow effect on it some more than others) thanks!.Www@FoodAQ@Com

Muscle meat is tightly packed fibres!.

Yes I know what you mean!.!.!.!.especially on the very thin sliced roast beef!.!.!.!.I can only presume its some sort of addative as you don't get it on beef you cook at home, when I see that, I thow it away!.!.!.!.!.maybe it water in the beef, lots of cooked meats have water added!.Www@FoodAQ@Com

It does that when it is less than fresh!.!.!.bacon does it too!.!.!.I dont buy it when it has that!.Www@FoodAQ@Com
