How does one properly freeze vegetables?!

Question: How does one properly freeze vegetables!?
Answers:
Peppers, onions and rhubarb can be diced or sliced and placed directly into freezer bags!. Remove as much air as you can to prevent freezer burn!. Other vegetables such as: carrots, broccoli, asparagus, cauliflower you need to blanch these!. Bring a pot of water to boil, have a bowl set aside filled with cold water and ice to "shock" the vegetables (it prevents them from being cooked further and locks in the color)!. Drop the veg in the boiling water, leave it for no more than 1 minute, pull it out with a slotted spoon and drop into the ice water!. When the vegetables are thoroughly cooled, place them in the freezer bag and remove the air from the bag!.Www@FoodAQ@Com

Most veg freezes well be simply putting them in a freezer bag and straight in the freezer!. It is only soft delicate veg and fruit that is difficult to freeze cas the slow freezing process causes the cells of water to expand and burst, so then they are defrosted, they are soggy and limp!. Food producers get over this by instant freezing by spraying liquid nitrogen on them!.Www@FoodAQ@Com
