I want to make the cocoa powder sweet, and liquefy it before setting it in a candy cluster!. Is this possible!?Www@FoodAQ@Com

I have been a candy maker (professionally) for about 6 years now and I don't see it possible!. Cocoa powder is what is left of the cacao bean after processing to make the chocolate nibs!. And then it still goes through a process before the consumer can actually use it!.!. You can try almond bark or even candy bars that are on sale!. Tis a less expensive alternative to the finer chocolates but still works well!. Choco chips are great too!!. Just remember, when melting, that choco maintains it's shape when heated and can burn easily!. A lot of stirring is required whether you use a double boiler (low heat) or microwave (short spurt, stir etc!.)!. also if the clusters turn gray or white!.!. its just the cocoa butter rising to the top and cooling (called blooming) nothing wrong with other than the apperance!. But that can be fixed by making sure you temper the choco correctly!. Choco is a touchy vixen! Good Luck!!
