Question: How long can I keep spaghetti sauce in the fridge-does the acid content prolong the shelf life!? thanks!?
My partner says that sauce is good indefinately because of the acid content!. I disagree; I think it's gross after 4 or 5 days!Www@FoodAQ@Com

You are right, sorry to your mate! The Acid Content is actually a negative content here in the shelf life of your Marinara Sauce!. The acid from the Tomatoes will start breaking down your sauce, creating micro-organisms to develope, so you should use it in 4 days, at the most!. Please freeze the unused portions and then you can re-use it!. There are some ingredients in foods and additives to aid in the shelf life of some foods, but Acidity is not one of them!. Exercise caution with tomato based sauces ,spaghetti sauces vary as to the acidity depending on the recipe , the inherent dangers in tomato sauces and possible food poisoning would should make you extra careful !.I!.m with you 4 to 5 days at most !.Of course you can freeze the sauce alsoWww@FoodAQ@Com

I try to use my leftovers in 7 days or less, usually less!. If you think you'll not be able to do this, pop items into the freezer; then you have no question about the safety of the food!.Www@FoodAQ@Com

It will not last indefinitely!. I would only keep it in the fridge for a day or two!.
