Something with rice!. I'm eating Mexican Red Rice and it is gooood!
MEXICAN RED RICE
2 tbsp oil
1 cup rice
2 cloves garlic, minced
1 medium onion, chopped
1 (8 oz) can tomato sauce
1 cup chicken broth
1 tbsp chili powder
3/4 tsp salt
2 roma tomatoes, chopped
--Heat oil in a large skillet or wok!. Add uncooked rice to oil and saute until slightly browned!. Add onion and garlic to the rice and stir until onion is browned slightly!. Add tomato sauce, chicken broth, chili powder, salt, and tomatoes!. Stir to combine all!. Cook over medium-low heat for 20-25 minutes, stirring occasionally!. Liquid should be completely gone and rice should be thickened!. *Optional: Add 1/4 cup frozen peas towards end of cooking time!.
