I'm a huge fan of making my own lunches! Here are a few ideas that I use for school:
-Maki (vegetarian sushi) is great for packing lunches!. It's so healthy and so easy to make and you'll impress everyone with your ability to roll your own! I make mine with cucumbers, avacados, spinach and carrots!. Sometimes I just cut the roll into 2 halves and eat it like a burrito!. It's really great to just throw in your bento box if you have one (get one! they're awesome!)!. You don't even need the reed mat to roll it!. You an use a simple dishtowel instead!.

-Always pack fruit!. Oranges are really great to pack because they're not easily hurt if things get moved around!. Apples and pears are also good for that!. You can find dried fruit at your grocer, and it's really convenient ! Dried cherries are amazing!. Sometimes I also prepare corn on the cob at the beginning of the week and pack half of one in my bag in the morning!.
-Cut mini pitas in half and stuff them with hummus and vegetables or falafel!. Any sandwich filling will do!.
-I always carry a little recycled baby food jar of natural peanut butter to school!. This way, I don't have to carry a whole big container, and I can just throw some rice cakes or toast into my bag and snack on them with the peanut butter when I need energy!.
-I love making these homemade granola bars at the beginning of the week and then throwing them into my lunch bag in the morning!. http://www!.motherearthnews!.com/Real-Food!.!.!.
-I ALWAYS bring my Sigg (www!.siggstore!.com) water bottle with me!. It's stainless steel, not plastic, so it's better for drinking out of!. It's really important to drink water throughout the day, and having a water bottle cuts down on waste if you go somewhere for lunch that has soft drinks!. In the morning, I can leave with an empty bottle and then if I go out to lunch I can fill it up with water at the soda machine!. Nobody ever says anything because water is free!.

When I was an Grad student, I use to bring the lunch kits made by StarKist - they consist of a can of tuna or chicken with an easy open can, a packet of mayo, a packet of relish, a wooden spoon and crackers!. They were pretty good, did not need refrigeration or heating up!. I also use to bring leftovers that didn't always need reheating, cheese cubes and sliced summer sausage - although we did have a fridge and microwave in our department lounge so if I wanted I could reheat things - and I kept things cool with a frozen bottle of water in an insulated lunch cooler!. Other things I kept in my backpack to munch on were homemade Trail Mix, fruit such as apples, oranges, grapes, peaches, pears and banana, crackers, cookies, candy bars, etc!. I continue to do the same thing for work!.
For a healthy snack, make your own Trail Mix using a combination of any or all of the following:
Dried cranberries - Craisins
Dried cherries
Raisins - plain or chocolate covered
Dates
Fancy Mixed Nuts - salted or unsalted, your choice
Dried Mango
Dried Papaya
Coconut flakes
M&Ms
Banana chips
Apple chips
Dried Peaches
Dried Blueberries
Dried Pineapple
Granola
Keep in a sealed container or ZipLock bags to keep fresh!.
For healthy lunches, I like turkey, beef or ham with cheese and lettuce sandwiches or wraps made with tortilla shells - make your sandwiches on whole wheat or multigrain bread and use whole wheat tortilla shells; salads with the dressing on the side; homemade chicken or tuna salad using just enough Miracle Whip or mayo to hold the ingredients together; celery sticks, baby carrots, radishes, cherry or grape tomatoes with some salad dressing on the side for dipping!.!.!.
