Ever tried Irish Porter Cake?!

I am a former chef and used to make a Guinness Xmas cake and a hot water sponge pudding with it, Porter like Guinness is a dark sweetish brew, porter is a little lighter and sweeter than stout!.
I used Porter when I worked in Jamaica for braising beef roasts/short ribs/shanks and even goat/lamb in a dish with the shanks or a shoulder roast!. You can make it yourself, soak the raisins overnight in half a bottle of porter, then the next day and them and some glazed cherries to a boxed cake mix, vanilla or spice and the rest of the porter and some milk or sour cream, the eggs and other ingredients, and bake it as directed, while it is in the oven open a second bottle of porter, add it to a pot with a cup of brown sugar and some vanilla cook this down to a thickish syrup like consistancy, and when the cake is done cool it then apply the syrup!.
Place it in on a plate, container or tin and brush the syrup on the cake for a few days, and then serve it with whipped cream even sweeten the cream with some of the porter syrup when whipping it, I used the same recipe in Singapore for our Sunday Mega Buffet at the hotel I was a sous chef in!.Www@FoodAQ@Com
