Why does salsa/hot sauce get spicier when left in the fridge?!


Question: Why does salsa/hot sauce get spicier when left in the fridge!?
I've noticed that "medium" salsa that is left in the fridge turns into a "hot" salsa after several weeks!. Am I the only person that has ever noticed this!?Www@FoodAQ@Com

Anything left for a while will tend to "reduce"!. that is the water will evaporate and flavors will concentrate within!. Cooks use this all the time to make sauces on the stove top by boiling away water and concentrating remaining flavors!. Only water evaporates!.

The opposite is true when you add water!. Flavor becomes diluted!. This is how we control flavor intensity!.Www@FoodAQ@Com
