Question: Bakers/Confectioneers!!!!!!?
I am picking up a cake in Maine(where I live) and travelling to south jersey(7hours) where our party will be held!. The Baker told me she is going to flash freeze the cake after putting a light layer of icing but she will ultimately be using fondant, as it is more durable for the long car trip!. Here is my question, Once we get to South Jersey, should I refrigerate the cake or leave it out!? I'm pretty sure that the cake is going to have buttercream and fondant on top!.!.!.!.!.I figured I'd just store it in the fridge but now I'm reading that condensation can bead up after taking it out and make the cake look spotty!. More info, the cake will be driven from Maine to New Jersey, then the next night is the party!.!.!.!.How do I store!? Please Help:)Www@FoodAQ@Com

usually baker will not decorate cake with buttercream together with fondant, they will decorate with either one, in case of travel long distance they will decorate with fondant, and you do not have to store it in the fridge, the baker will flash freeze just to make sure the fondant is hard, its take a few minutes!. Store it in the fridge!. Then take it out 30 minutes before when you are going to eat it!. When you put it in the fridge, it won't spoil!. Then it won't be cold when you take it out 30 minutes before you eat it!. Enjoy! :)Www@FoodAQ@Com

i would put it in the fridge so it will stay cold and fresh but still defrost a little!.Www@FoodAQ@Com

put it in the frig for an hour or less and keep the AC on in your car~Www@FoodAQ@Com
