Cross contamination is when you contaminate any food with bacteria from another food!. Ex: you cut raw chicken with a knife and then use the same knife and cutting board to cut raw veggies!. Direct contamination occurs when the actual source of the bacteria comes in contact with the food!. Ex: Cockroaches carrying Ecoli run all over your veggies at night!.Www@FoodAQ@Com

Direct is when the birds defecate on the uncovered potato salad at the picnic!. The source comes in direct contact with the food!.

Cross contamination is when you use a knife or cutting board for raw chicken and then use it for your lettuce for tossed salad without cleaning the knife or cutting board!. Hence, indirect!.Www@FoodAQ@Com

Well I have no background in catering - but surely cross contamination is the transfer of a (bacteria) from one item (food) to another (food) item!.
Direct contamination would be the introduction of a (bacteria) from origin!.Www@FoodAQ@Com
