You can as long as you scrub them really well!. I usually roast them in the oven (in foil) to make them carmelize, it will ooze from the skin because of the high sugar content, slice it open and put on a pat of butter, sprinkle with salt and pepper and enjoy!.Www@FoodAQ@Com

As with any fruit and veg most of the nutrients are within the skin, with potatoes the fibre is what is contained in the skin and its personal choice!.Www@FoodAQ@Com
