Question: AHH! HELP! When making marshmallows, should the sugar get a medium carmal color or is it burnt!?
Its at 311*F now like teh recipe says, but it got really dark from about 275-300 degrees, Im only cooking on lo even though it says hi!.!.!.
didnt add gelatin yet and egg whites not whipped!. should i just redo the sugar or is this the color its supposed 2 b!?Www@FoodAQ@Com

Here's a good recipe if you want to try it!. I use it often!.

3 Tbs!. (21 g) gelatin
1/2 cup (120 mL) water
2 cups (400 g) sugar
2/3 cup (160 mL) corn syrup
1/4 cup (60 mL) water
1/4 tsp!. (1!.5 g) salt
1 Tbs!. (15 mL) vanilla extract
Powdered sugar

Soak the gelatin in the 1/2C water!.
cook the 1/4C water with the sugar and corn syrup to 120C or 250F!.
Poor sugar into the gelatin mixture while mixing!.
Add salt and vanilla!.
whip until fluffy!.
Pour and spread into oiled pan and set for 3 hrs!.
Cut and coat in powdered sugar!.

keep going - it may just be the sugar breaking down!.
I made them before and thought it looked amber or a bit darker but mine were white as snow!.
Did you use a heavy pot!? if not it may have scalded the sugar!.
I use a heavy enameled cast iron pot!.Www@FoodAQ@Com

I'm no expert but I'm sure the end product will be no whiter than what you have now!. It's not like gelatin or egg is going to bleach it!. Maybe this is the reason it says high, so that doesn't happen!.Www@FoodAQ@Com
