I am a former chef while the others are right and it is pollack your second question is were is came from and it is originally from Japan were it is known as "Surimi" which is Japanese for artifical, pollack is plentiful and is a good inexpensive fish to use, alot of Fish and Chip places (Long John Silvers) use it as there main product, for the surimi first they clean, skin and then fillet the fish it is then grounded and pureed, mixed with binders and seasonings, egg white or an albumen material, then cooked in long strands and finally rolled into the stick shape you see at the grocery stores, the chunk style is done the same but cut before packaging, now at one time they would add a crab flavouring, I would buy the stock from the crab processor if it were me to add the natural taste, but this not really done!.
I have been using it for years and remember it coming out on the market when I worked as a chef in the 1970's & 80's, most is still good but there are some that are a bit chewy and tasteless!.Www@FoodAQ@Com

You say "It's not fish!." but that is wrong!. It is fish!. You have only to read the ingredients label on the package to know as much!. Almost all the imitation crab I have seen and sampled is made from a fish (Whiting) found commonly in the ocean waters of Alaska!. It is processed and packaged under the same exacting conditions as every other kind of fish, crustacean, mollusk, etc!. harvested from the waters of the biggest state in the U!.S!.A!. At a time when true crab is being sold (even here in Alaska) for as much as $13!.00 or more per pound, imitation crab makes a great substitute!. Try it warmed slightly in the microwave and then dipped in melted butter!. A simple recipe and SOOOooooo good!. (And inexpensive as well!.)Www@FoodAQ@Com

It's pollock, a fish, not even crab!. There are several different types, like European and American, but the largest pollock fishery is on the Bering Sea in Alaska!.
