Marinading chiken for a bbq??!
I am invting lots of people for a bbq and would love some recipe ideas to marinade meats - obviously I will do the normal burgers and sausages but I wanted to try doing chicken, lamb kebabs even fish - I have no idea what I could marinade the meat with tho - any ideas peeps please!? xx ty xxWww@FoodAQ@Com

sliced ginger (one nut, size of walnut will suffice)
sliced onion
light soy sauce
spoonful of tumeric
sliced shallots
garlic
white wine
salt + pepper+ oil

There are loads of seasoning you can use for BBQ now!. Most 'fashionable' has to be Peri Peri!. This is really spicy with a high chilli content!. Some others you can think about are:
- Jerk Seasoning, best for beef or red meat (contains more pepper/paprika rather than chilli)
- Cajun Spice, chilli AND paprika based for Lousiana flavours!. Creole Seasoning is similar but a bit more sophisticated!.
- Lemon pepper, literally lemon zest and black pepper for a really zingy taste!. Chicken or really yummy with fish!. Obviously you may not want to over-flavour fish, (and it can provide a haven for people who dont like a lot of spice) but there is a trend to curried fish which may tempt some of the meat eaters to give it a try out of curiousity!.
- Baharat, Middle Eastern flavours that are warming rather than hot, superb with lamb!.
- Tandoori Masala, usually used with chicken!. Hot!
- Jalfrezi Mix, I would use on chicken kebabs!.
- Fajita Seasoning, chicken again!.
To liven up the burgers and sosi have some salsa dip!.
If you get these from the source below you just mix the powdered spices with oil/water to create a marinade, or you can just rub stright onto the meat and then baste the meat in the normal way!. A marinade will take the flavour right through and help to tenderise the meat!. A rub will tend to stay on the top more and create a yummy coating!.

Vegetarian Plea!. BBQ's are a nightmare for vegetarians!. Even if the cook remembers to keep their stuff away from all the dripping meat juices it is easy to forget and to use the same cooking utensils for both meat and non-meat!. My husband usually ends up eating the salad in a bread roll! If you do your fish in foil that keeps that away from the meat for anyone who wont eat meat but can do fish!.

This Recipe is the one that the "firehouses" use for the roadside Chickens, its the best:
Cornell Chicken BBQ
1 cup cooking oil
1 pint cider vinegar
3 Tablespoons salt
(Adjust salt quantity or eliminate to meet
individual health needs and taste!.
BBQ chicken basted frequently during cooking
will be saltier than chicken that has
been lightly basted!.)
1 Tablespoon poultry seasoning
1/2 teaspoon pepper
1 egg
Beat the egg, then add the oil and beat again!. Add other ingredients and stir!.
Brush sauce on the broiler halves every few minutes during cooking!.
For the Lamb and fish (especially salmon) - try this teriaki one:
Teriaki Grill Sauce:
2 cups soy sauce
1 cup sugar
1 tablespoon molasses (optional)
1 oz dry sherry or bourbon
1 tablespoon freshly grated ginger
3 cloves garlic, grated
1 tsp Accent (optional)
Combine ingredients except for ginger and garlic in a saucepan!.
Cook over low heat, stirring until sugar has dissolved!. Add ginger and garlic; cool!.Www@FoodAQ@Com

brown sugar, vinegar (these two things are the only think necessary if you just want sticky chicken - but don't try and make it without these things!), tomato ketchup, dijon mustard, chilli sauce, worcestershire sauce, garlic etc!. you can pretty much put anything in, it's all good!.
Then marinade for about 2 hours!. Make sure the chicken is properly cooked if you're going to bbq it though, you don't want to be stuck to the toilet the next day!Www@FoodAQ@Com

A classic pairing for chicken is lemon juice, try adding some coconut milk, garlic (chopped small) a chili sauce like tabasco, enough for your taste, a bay leaf!.

I make chicken kebabs by chopping the chicken into squares and marinating overnight in:
soy sauce
pineapple juice
white wine
roughly chopped onion
then i make kebabs with the chicken, pineapple, pepper and onion - you need to use a new onion not the one from the marinade as it will be too salty!.
