Beef expiration?!

Question: Beef expiration!?
I have Beef BBQ that had expiration date 5/12/08 but I know when I freeze it in the refrige, the expiration date is not that of a big deal afterward!. I don't plan to have it for a year or anything, but since I'm the only consumer of it, it's hard for me to finish the whole thing right away!.

Yet!. today 5/17/08, when I put the meat out to cook it, I saw some small dark-brown spots on some of the meat!. They're still rare, but I don't think they came with the meat when I bought it!. Does that mean the meat is now somewhat unsutable to eat!?Www@FoodAQ@Com

Answers:
As long as it doesn't smell bad it's fine!. The date is a "sell by" date which means it's good for about a week after to consume!. The dark is the myoglobin in the meat oxidizing!. It doesn't mean it's bad!.Www@FoodAQ@Com

It is best to stew it and this type of cooking is better, to be sure!. also the stuff you put in the stew will enhance the flavour of the meat!. Eating food past expiry date is safe if they are stored in the freezer!. Anyway, my grandparents and grandaunties have been eating expired and molded food and yet they are stronger than us and are close to a 100 years old and still walking!.!.!. :o)Www@FoodAQ@Com

If it's just a few spots, it's probably okay if it was in the freezer portion of your refrige!. I'd cook it tomorrow!.Www@FoodAQ@Com
