What do you think is the perfect BBQ set-up? What equipment and method is best?!
For me:
Charcoal all the way!
I use a traditional, round kettle style BBQ!. Weber makes the best!.
I also like to throw chunks of Hickory or Mesquite on the coals at the last minute before I throw on the meat for grilling!.
When you slow roast pork on a charcoal BBQ (this is done by grilling it on indirect heat) you get tons of flavor!. Just about any meat is great when cooked with charcoal!.

I have a Char Broil professional smoker: you can cook conventionaly on the coals, or it also has a offset box to slow roast/smoke meats!.!.!.!.mine holds 4 racks of ribs and 2 chickens, or 2 racks of ribs and 4 chickens!.!.!.!.!.or 2 full cut beef briskets!.!.!.!.!.
Yes, screw gas, I don't like the taste of Propane!!!!
And I, like you, like to smoke my meats with different wood chips that have been soaked: my new kick with wood chips is apple and avocado!.!.!.!.!.!.I have gotten used to the smoking method, as even though it can take about 5 hours to smoke a brisket, the flavor, texture, and the way it makes the neighborhood smell, it's well worth it!.!.!.!.!.!.!.!.
