Both!. I think escargot is good mainly because it is drenched in butter before broiling!. (Lots of butter makes anything taste good!.) I could take it or leave it!. With caviar, it makes a lot of difference if you have the "real thing," which would be beluga (Russian) caviar!. It should be served in the classic style with blini (thin pancakes), minced raw onion and creme fraiche!. I think it is wonderful, but the real stuff is very expensive!.Www@FoodAQ@Com
