You're on the right track:
My suggestion, if you're going to have a bunch of people over, especially with kids, I'd make a "taco bar" and let people build their own tacos: That way, no one can say they don't like their taco, as THEY made it!!! Purchase some disposable sturdy paper bowels and put ALL the 'fixings' in the bowls and have them lined up buffet style!.!.!.!.!.
Main filling: ground beef (taco seasoning packet seasoned)
shredded chicken (seasoned the same way)
Onion/Green onion
Chopped Cilantro
A couple prepared salas (like hot, mild, and green)
Cheese (like that pre shredded Mexican Blend)
Sliced Chopped Olives
Guacamole
Sour Cream
(more cheese, to me, there is no such thing as "too much cheese")
Cabbage (over lettuce, as one poster said, it stays crisp longer, look at what Rubios puts in their fish tacos: cabbage)
And of course the taco shells: you might want to have some tortillas that are soft, for soft tacos, and some flour tortillas for those who want to make burritos!.!.!.!.!.Enjoy your tacos!.!.!.!.!.
Sides: Refried beans, Mexican Rice, this way, even if there is a vegetarian or two, they can still make rice and bean tacos or burritos, meatless!.!.!.!.!.!.!.!.!.!.!.!.!.
AND DON'T FORGET THE MARGARITAS FOR THE ADULTS!!!!!

Southwest chicken is really good in tacos and fajita steak as well!.
also, get a jar of nacho cheese as an alternative to shredded!. It's messy, but oh, so good!
also, if you want something a little different, try smoked cheddar!.
You can get it at any deli and just have them cut really thick slices and grate it yourself over the tacos!.Www@FoodAQ@Com

sour cream is good too!. i have also heard of people putting refried beans in their tacos!.you can also add different cheese mixes if you like!. different meats work too!. some people my not handle the grease from the beef well!. you can make up some ground turkey to subsituted or even some chicken!. With trying to offer so many things, have you thought of how you plan to set everything up!? you may want to try a buffet style set up if you have the room!.
Godd luck! and enjoy your meal!Www@FoodAQ@Com

I like all the usual suspects, chicken, beef, lettuce, cheese, onion, tomato and sour cream with salsa too!.Www@FoodAQ@Com
Sometimes I used finely shredded raw cabbage instead of lettuce because it stays crisper longer!. I agree with other posters about guacamole and sour cream!. Good luck with your taco fiesta : )Www@FoodAQ@Com
the best tacos have beef, cheese, and lettuce, you could try using melted nacho cheese cuz that's really good too, sour cream is also good on a taco!.Www@FoodAQ@Com
