Answers:
That's a tough one, oysters take on the flavor of the water they are harvested in!. Oysters filter about 50 gallons of water a day!. So, if the water has a high mineral content that flavor i!.e!. copper, iron, attribute the taste of the oyster!. If your at a raw bar ask for a good oyster for the uninitiated!. Trust me for the price they're going for they will gladly show you the light so that you'll purchase more!. also, using condiments like a Mignonette sauce or even a simple splash of lemon may help you until you acquire the palate for oysters straight out of the shell!.
Have fun!.!.!.
By the way, oysters should not smell off, just a briny smell of the sea!.Www@FoodAQ@Com
