Why don't mushrooms cook down?!


Question: Why don't mushrooms cook down!?
It's something I've just realized after all these years of cooking! Meat and vegitables become tender, even mushy, after simmered for a long time, but mushrooms stay the same!. Why is that!?Www@FoodAQ@Com


Answers:
Mushrooms contain a lot of water!. If you cook them dry or in fat it drives out the moisture and they will shrink!. If you cook them in liquid they will not shrink and may even expand a bit if they had already dried out some!.

i have never really noticed it--all my mushrooms, i have cooked over the years saulteed in butter, they appear to shrink, i sure they got softer---what type or kind are you using!?---have these been canned dried mushrooms!?---i know a guy that used canned or dried mushrooms--he soaks them in water for about an hour before cooking---but he dries them and bottles them hisself also--they are wild picked and not store bought----some mushrooms will shrink more than others----Www@FoodAQ@Com
