Answers:
The part of the pumpkin used to make pies is the section between the skin and the seeds!. To cook it you cut off the top and bottom of the pumpkin cut it in half length wise and scoop out all of the "goop" You roast it in an oven for about an hour depending on the size of the pumpkin!. (Wrapped in foil seasoned w/butter, cinnamon, sugar and a little nutmeg is how I do it!. Set on about 325 degrees!.) After you've roasted it and its cooled down so you can touch it you can either cut away the skin, or scoop the pumpkin off of the skin!. After that you add the rest of the pie ingredients, pour it into a pie crust and back into the oven!. Personally I think cooking the pumpkin yourself tastes way better than any canned product!.Www@FoodAQ@Com
Giles it's the plup but I'll tell you what I do , I have this 10 Qt!. pot with a fit in collender and I steam it until it's soft that a skewer goes though it real easy , let it cool then scrape it out ,with blender you can send it though until it's smooth or leave it rough ,
Put your spices in until it its the way you like it , do what the pie shell tells you to prepair , pour in the pumpkin bake and enjoy !.Www@FoodAQ@Com

In a pumpkin you have the outside (hard skin), inners - which are fibrous stringy bits, and seeds!.
for a pumpkin pie, and soup alike, they would use the inners, these are mainly the carbohydrate storing cellular structures (cellulose) and they can be broken down to smaller structures for nutritious use in foodstuff!.
so yeh, they use the stringy inners (no seeds (usually they roast them)) which are the bits u scoop out when making a "jack-o-lantern"Www@FoodAQ@Com
