I am a former chef and the first young lady is right, I worked with both, in the spring we used to get crates from France, big thick ones that we had to peel, I like the thin green for salads and stir frys!.
The purple ones are nice to and tend to be some what sweeter, the white one can be a bit tangy, we did them in cloth napkins and served them with hollandaise sauce as a side veg, and as an appetizer with bacon and a brown butter sauce with lemon!.Www@FoodAQ@Com
