I'm in Australia but my absolute favourite is to get!.!.!.!. your butcher to bone a shoulder of lamb, cut all excess fat of it and marinate it in lemon or lime juice, some sort of curry paste, or tandoori paste from jar and loads of garlic and leave it in a bag or whatever in the fridge overnight then BBQ it the next day and serve it with a lemon wedge, flat bread, a tomato salad with cilantro, a Lebanese parsley salad, tabbouleh (cracked wheat etc etc) and some hummus with chili sauce on the side and a yogurt cucumber and mint raita!. You can do the same with halved chickens, pork etc!. Then you have to have sausages on the side lots of little ones, not overcooked so they are still juicy and many salads and a mass of bbq'd sliced onions!. And things on sticks, we like them, meat, veg, meat, onion, mushroom, meat, paint some favourite stuff on them!. Yum, now I am hungry, stop torturing people with BBQ questions you St Louian!!!!!!!!!!!! xxxWww@FoodAQ@Com
