Why do chefs toss or shake a pan and never stir it??!
All t!.v chefs (and I suppose all chefs in general) always toss the ingredients but why, and should we all do that!.Www@FoodAQ@Com

I do too!.
It works well when you don't use much fat in the pan!. Several reasons for it!.
1) It's quicker than stirring with a spoon
2) Delicate ingredients don't get crushed with the spoon!.
3) Your pan does not get scratched (especially non stick)
The motion is more of a pulling and lifting motion than a tossing motion!. You pull back the pan and slightly snap your wrist in a lifting motion!. Practice with just a few dry items in the pan since it's less messy when you miss!.Www@FoodAQ@Com

Being a former chef like "Leonard C", when your busy it takes time, plus alot of times you have several different items on the go, and stirring one with a spoon, wooden or other with the same spoon could make the sauce taste like fish or colour a white sauce with another colour!.
Plus you move the food forwards and not have to be standing over it mixing, when making something in bulk or a pot a spoon is nessessary, shaking the pot or using your hand could cause a problem!.Www@FoodAQ@Com

Starring and tossing are very different from each other!.!.!.!.when you stirr it the top layer usually remains in the top & only the bottom layer gets cooked faster & when the top layer starts boiling the bottom layer may get over burnt!.!.!.but when you toss it the entire item goes up & down and gets mixed well and get the heat uniformly!.!.!.!.!.just try and seeWww@FoodAQ@Com
because tossing stuff ina pan takes one hand, while stirring can often take two!.!.!. and to stir you gotta have a utensil, which means you gotta grab it!.!. it's a lot quicker (atleast once you get the hang of it) to just toss, then to grab for your utensil then stir!.Www@FoodAQ@Com

but it dosent squash the food in the pan and chefs might want the food looking perfect!.
