You could also break them down by the animal whose milk is used to make the cheese!. Cow's milk is most common, but sheep's milk is used for a number of excellent cheeses, including Roquefort!. Goat's milk is also used for a variety of different style cheeses!. There is a Buffalo Blue made in England which, I suspect, is from water buffalo (which is also the milk used to make genuine Mozzarella)!. One of my favorite blue cheeses is Cabrales which is often made with a mixture of cow's, sheep's and goat's milk!.
