What is a sous chef?!
What do they do!? On Hell's Kitchen and Food Network there are always lots of 'sous chefs" but I'd like to know what that means!.

The term “sous” comes from French, and it means “under” chef, hence the sous chef ranks directly below the executive chef!.
The sous chef is directly in charge of day to day meal production in the kitchen!. He or she actually gets to cook most of the time while the executive chef must spend much of his or her time in the office, tending to issues related to business, menu planning, personnel issues and long-term planning for the restaurant!. The sous chef is generally given the responsibility of ensuring that the kitchen functions efficiently and effectively especially when the Executive chef is not in the kitchen!. However, it is not to be forgotten that the Chef is King in the kitchen!. The idea of a sous chef is that he/she can do some of the work that the executive chef delegates to them!. The sous chef is a trained sort of "under chef", if Tony Soprano is the Executive Chef, Pauly Walnuts would be a sous chef!.!.!.!.!.in some instances they even help manage the kitchen under the guidance of the Exec!.Www@FoodAQ@Com
Chefs that do all the prep work - chopping/slicing, and basic prep like basic sauces and bases, some pre-prep for the main chef - which allows the main chef to prepare dishes faster!. They also can do main prep under supervision of main chef!.Www@FoodAQ@Com

A Sous Chef is a second chef but can only be called so only if the kitchen brigade is greater than 5!.
