I want to know if it's considered a white flour and if it's refined!. Thank you!Www@FoodAQ@Com

Answers:
No it is not considered white flour, like white wheat flour they have removed the outer coating that makes it a slight brown colour, it is not refined in the same way other are just ground and sifted or as in the white version the bran like coating removed, I use it in 5 grain pancake, a Ezekeil type bread, in my Ethiopian injera with the teff flour, the only thing is like non wheat flours it has not gluten, so it make a very short dough, so it will not go it alone!.

I should add I am a former chef now a vegetarian, lacto-ovo and use it in many things, it is high in vitamins/minerals and is gluten free!.Www@FoodAQ@Com

White spelt flour can be used as a substitute for white flour in any recipes that you have!. It is the same thing, but made of spelt instead of wheat!.Www@FoodAQ@Com
