Why do most hamburger recipes call for eggs?!
Just wondering what the eggs add to the recipe!?
Do they add flavour or are they there to hold the meat together!?
And the same goes for bread crumbs in a burger!.!.!.
Are they mainly used for flavour, texture or structure!?

Eggs are used as a binder in hamburger recipes!. You really need to use an egg the lower the fat content of the meat!.
Bread crumbs are used as an extender, generally speaking!. By using a heavily flavored bread, like rye or pumpernickel, it can also change the flavor of the dish!. Bread with a high content of coarse ground grain will also change the texture!. But I think that any regular recipe that calls for bread in a hamburger dish, the reason is extender!.
