What's the point of soaking beans?!


Question: What's the point of soaking beans!?
I bought a bag of red kidney beans and I'm wondering if there's any way of speeding up the process so I can eat them It says I have to soak them for an hour and then after that it can take another hour and a half to actually cook them!. Is there a faster way besides buying a can already cooked!?Www@FoodAQ@Com

Here's why I recommend soaking!.

Soaking allows beans to slowly absorb the liquid they need to cook evenly and completely!.

Soaking also keeps the beans intact so they don't split open,and prevents the outside of the bean from cooking while the middle remains hard!.

Soaking helps break down the oligosaccharides (the indigestible sugars that cause gas) in beans!.

Probably the most important is that soaking allows for shorter cooking times and that preserves the most proteins, vitamins and minerals in the beans, maximizing their nutritional value!.

Less cooking fuel is used with the shorter cooking times used with soaked beans,and that saves you money!.Www@FoodAQ@Com

No, if you try doing it fast, the beans fall apart and become mush - it's not worth it - I know I've tried it - follow the directions -Www@FoodAQ@Com

if you soak them the night before and put them in a slow cooker/crock pot the next morning they're done by that evening!. They come out real nice!.Www@FoodAQ@Com
