Flavoring your foods... how do you know when enough is enough?!
I usually go overboard when seasoning my foods and don't realize it until later when the dish is on the table!.!.!. What is the trick or what is key to getting just the right flavor!? The best chefs know something I don't know!. Are they born with special taste buds!? or can an ordinary cook like me learn the secret!?

To do this start with small increments,remember you can add but once there is too much it's hard to cut back or take away!. LESS is MORE!. your guests plates will be cleaned as they keep eating trying to figure out your secret ingredients!.

You know what I really think!? I think visiting Italy this year really opened my eyes to the fact that we Americans over-spice our food!. I came back saying those Italians don't know how to cook Italian food !. !. !. why!? because we OVER spice it!. So I started NOT salting things and allowing salting at the table for the individual (some idiots salt before they taste anyway), and trying to hold back on over garlic, basil, etc!. So the end result is actually enjoying the flavor of the food you are working with - chicken, beef, pork, lamb, venison, etc!., with a hint of seasoning!.
