I spent all my working life working in industrial catering, all very reputable companies and had never come across anyone who wasn't legitimate and legal UNTIL I retired and took a casual p/t job in the private sector, oh boy did I get my eyes open, the kitchen/domestic side were full of miscreants and illegals, all working for a pittance, paying no tax etc!. and not caring about hygiene, personal or otherwise!.
The catering industry always had a bit of a bad reputation but I wouldn't recommend anyone making a career out of it nowWww@FoodAQ@Com

The restaurant industry isn't all it's crack up to be!. It's really nothing like you see on TV!. Mostly waitstaff are young kids trying to make a living for the time being, and know they won't be working in the restaurant forever!. The back of the house is full of cheap labor positions like dishwashers, bus boys, prep cooks, etc!. These jobs are a dime a dozen, and the people that fill them aren't the cream of the crop, so to speak!. The management positions are not very high paying positions like one might think!. Managers are overstressed, overworked, and underpaid!. Unless you work for a high volume, fine dining restaurant, I would not suggest trying to make a career of the restaurant industry!. It's nothing like you see on TV!. There is incredibly high turnover, and chances are, unless you are a restaurant owner, you won't be living large!.Www@FoodAQ@Com

it used to be my aspiration to beome a chef, but i dug a little deeper, and realised it really is an unpleasant industry, unless your one of a lucky few!.
i now just stick to making good food for myself, and i'm content with that!.Www@FoodAQ@Com

Many restaurants have cheap and not always legal immigrants working for them, but I wouldn't say escaped convicts that's just silly!.Www@FoodAQ@Com
