I prepared duck for years!. It is excellent!. I boil water, add oriental spices, molasses, rice wine vinegar, Port wine, Maggi, Bay Leaf, Soy sauce!.Turn pot off!. Place cleaned duck in mixture, let it sit for about an hr!. After that, tie string to wings and hang in an out of way spot with a drip pan underneath, let dry, fan speeds it up!. After it cures for a while maybe 4 to 6 hrs!. Heat oven 350, place on roasting rack and roast for 3 hrs!. Or you can butterfly it and so the cooking time is half!. You can use the boil mix to baste it!.
There is always another way!. Clean duck thoroughly, add salt, pepper and Maggi together and rub on duck!. Preheat oven to 350!. Place duck on roasting rack with roasting pan sitting underneath, (you need to drain the fat off from time to time!.)
Roast for 3 hrs!. Take a can of dark sweet cherries and heat, Take a bottle of brandy, kirschwasser, or cognac, (place bottle in hot water)!. Pour the heated cherries over duck and spritz the warmed alcohol over the cherries and light, using safety measures, of course!. DO NOT Prepare at a table with a Tablecloth or other flammable objects in a close vacinity!.
Do not dump the alcohol in one spot on the duck, just sprinkle trying not to overshoot onto other surfaces!. And that is how you make Flame du Cunard!.Www@FoodAQ@Com

It is quite delicious when prepared properly!. The breast should be sauteed in a little duck fat just until it is cooked "rare!." This is one of the only poultry items that is delicious rare!

The rest of the bird is best when roasted or rotisseried, IMO!. There are a lot of ways to cook it other than that tho!.Www@FoodAQ@Com

Like the others, my favorite is Chinese BBQ'd duck!. If you live near where that is served they are often hanging roasted in display windows!. I guess the taste depends on what you grew up with and I've loved it since I was a child -- crispy skin, and I don't think it is gamey at all, it just has its own delicious flavor!. Some folks think its weird or gross but I think of it as perfectly normal food!. Another way to eat it is pressure- or slow cooked with anise, wine, sugar, till the meat falls off the bones!. Yes!. I had it once at a chinese restaurant and it was aromatic!. It tasted different to usual!.!.!.didn't really like it that much!. I've had it just normal, roasted duck, and it's really nice :) The skin goes nice and crispy!.

I think it has a very rich taste!.
It was roasted just like you would roast a chicken!.
