What do they mean by 'alcohol based extract' in this vanilla flavouring or any other flavourings? thanks!!

Vanilla essence comes in two types: alcohol based and oil based!. The process is similar it's just that in the one case they soak the beans in the alchol to infuse it with the essence and the other they use oil!. Depending on what you're making, you can alter the flavour or texture based on which one you use!. I prefer the oil based myself, but that is a personal preference!. They extract the flavour by soaking vanilla beans in alcohol, then evaporate it until it has a standard alcohol/vanilla ratio (and you can still pour it easily)!.
