Do kettle-cooked potato chips contain acrylamide?!


Question: Do kettle-cooked potato chips contain acrylamide!?
If so, how much, approximately!? Would it at least be significantly less than those that are fried or baked!?!.!.!. or would it be more!?Www@FoodAQ@Com


Answers:
It appears that all carbohydrates that are cooked contain some acrylamide!. The primary key to the amount appears to be the temperature are which they are cooked and length of time!. However some recent studies show that vacuum cooking appears to reduce the amount in the finished product!.

At this point, I think the question is too complex to have a simple answer!.
