Why are my brotwurst moving?!


Question: Why are my brotwurst moving!?
I was making sausages in a pan on my oven earlier, and early in the cooking processes they were moving! This wasn't a wobble from off-set balance, but they were moving slightly side to side in intervals rather quickly!. Can anyone explain exactly why this happened!.!.!.I'm curious!.Www@FoodAQ@Com

Bratwurst, like many things, contain moisture!. When the moisture heats up, it expands, causing movement!. If a small area has more moisture, it will cause uneven expansion and give the object movement as well as swelling!. After heating Ball Park Franks to their full expansion, place them away from the heat and allow them to cool!. As the moisture cools down, contraction (shrinkage) will take place and the franks will be the same size as before cooking!.Www@FoodAQ@Com

Because the fat inside them is boiling and creating kinetic energy!.

I usually put them in a pan of water and simmer them for 10 minutes and then stick them under the grill for 2 minutes each side just until brown, and they stay juicy!.

Herbed Top Round Roast Recipe

Taken from The Everyday Low-Carb Slow Cooker Cookbook

? day | 10 min prep | SERVES 6 1/2 cup red wine

1/2 cup water
1 tablespoon thyme
1 tablespoon rosemary
1 tablespoon black pepper
1 teaspoon kosher salt
2 tablespoons olive oil
3 lbs top round roast
5 garlic cloves, halved
1/2 medium onion, thinly sliced
2 pieces bacon, cooked (not crispy)

Pour the red wine and water into the slow cooker crock; set aside!.
In a small bowl, combine the herbs, pepper, salt, and olive oil; stir to combine!. Using clean hands, rub the oil and herb mixture all over the beef roast!. Place the roast into the slow cooker crock!. Sprinkle the garlic and onions aroudn the raost and lay the bacon strips over the top of the roast!.

Cover and cook on LOW for 10 hours!.
Before serving, flip the roast over in the slow cooker, then turn the slow cooker off and let the roast rest in the slow cooker for about 15 minutes!. Remove roast to a platter and let it drain for a few minutes!.

To serve, use a sharp knife to slice the meat against the grain!. If you like, dip the roast slices into the cooking juices before serving, or serve the cooking juices alongside the beef!.Www@FoodAQ@Com

Maybe it was the process of cooking! Proteins shrink, fats expand and factor that in when something is enclosed in a sausage casing!. also, the sausages may have been col to begin with when you put them in a hot pan!. It's the temperature difference as well!. Hope this helps :)Www@FoodAQ@Com

as the fat liquifies and starts to steam, it escapes from holes in the sausage membrane under pressure and that forces the meat to move!.Www@FoodAQ@Com
