WELSH RAREBIT
Serves 1
INGREDIENTS
250g of mature Cheddar cheese
2 tablespoons of beer
1 teaspoon of mustard
Ground pepper to taste
2 slices of bread
Butter or low fat spread
METHOD
Grate the cheese!.
Put the cheese and beer into a saucepan on a medium heat!. Cook until the cheese has melted!. Stir frequently to stop it sticking!. Add the mustard!. Mix thoroughly!. Season with the pepper!.
Lightly toast and butter the bread!. Put the cheese mixture onto the toast!.
Cook under a preheated medium grill for about 2 minutes until golden brown!.
ADDITIONS & ALTERNATIVES
Add a splash of Worcestershire sauce!.

The Welsh name for this dish is caws pobi, which means “roasted cheese”!. The first recorded use of this name was in 1547, and is also the earliest known reference to cheese being cooked in the British Isles!. The first recorded use of the name Welsh rabbit was in 1725, but its origin is unknown!. I really love cheese on toast, however my cooker has an electric grill that takes about 20 mins to warm up, so i never have it anymore, it was a lot easier when i lived at my parents house cos they had a gas grill that was perfect for cheese on toast (and sometimes with beans on top)!
