Fall off the bone or gnaw off the bone ribs?!
How do you like your ribs!? I prefer tender, fall of the bone, but some like it so you have to gnaw at it!. What's up with that!? Is that a certain cut, or way of making them!? My co-worker loves that kind!.Www@FoodAQ@Com

My ribs have always gotta be tender and easy to peel away from the bone but never fall off the bone!. You want to be able to take a clean bite and see no bits of meat left behind!. I also like a really good thick smoke ring on my ribs, so it develps a good crust on top that kidna crackles when ya bite in to the rib!. What your talking about could be the method of smoking them, could be not enough or the type of rib they are using!.
I also use the beef short ribs for mine and I never have any leftovers or complaints so I must be doing something right!.!.lol!.
Edit I agree about Famous Daves Ribs gnawing theirs no thanks, I stick to their brisket covered in Bold n Sassy when ever we go there, but my hubby has to have the ribs, I think he just likes their method and sauce!. My kids hate their ribs and love their chicken tenders dripping with Devils Spit sauce those brave lil souls!.!.lol!.Www@FoodAQ@Com

I lean towards fall of the bone ribs!. My description of fall off the bone is that you can pull the rib bone out of the meat, but the meat still holds it shape!. The meat shouldn't be mushy or disintergrate!.
The gnaw off the bone is an off-shoot of rib competitions!. In a rib competition, the rib should still be a little firm where they have a little "bite" to them!. You lose points for fall of the bone ribs!.
Personally, as long as the ribs are good, I really don't care!. However, I believe in rib competitions appearance is also a factor, but people have translated the "fall off the bones" ribs as bad!.

I just answered a rib question, I get the best of both worlds with my tecnique!. I don't want to rewrite it as it is length, so look, it up!. The back side of the rib get alittle blackened and has crunchy goodies and the 'meat' side is perfect and comes right off!.!.!. ya'll are making me hungry!.Www@FoodAQ@Com
