Canadian bacon (or back-bacon) is cut from the loin (the back) of the pig and is low(er) in fat!. It is usually crusted in corn or peameal!. American bacon comes from the belly of the pig and we all know about the fat!. Ham is pretty much everything else!.

Canadian Bacon and American Bacon are also cured differently!. Much of the "Canadian" bacon we get in the U!.S!. is actually just thin slices of ham!.Www@FoodAQ@Com

Both are pork, but they come from different parts of the hog!. Ham comes from the upper part of the hind leg, while Canadian bacon is lean bacon from the loin, or back!. At least, that's what we Yanks call Canadian bacon; north of the border, that's called back bacon!. The difference is the part of the hog!.
Ham is the thigh of the hog, hence the circular bone which is the leg bone!.

Canadian bacon is lean meat from the loin or rib-end of the hog!.
