Question: Can you keep pancakes in the fridge for a day or two without them getting mushy!?
We're hoping to make a bunch of pancakes for a grad party the day before- will it work to keep them in the fridge for 24 hours or so!?Www@FoodAQ@Com

Sure!. Just make sure they are protected!.

If you microwave them then wet a paper towel to drape over them as it will help retain some moisture!. I got that tip from a woman I work with!.Www@FoodAQ@Com

Absolutely! They also freeze well!. Put sheets of waxed paper between them for easy separation or freeze individually, then stack!. I always intentionally make extra pancakes and waffles on weekends, then freeze for a quick easy breakfast on weekdays!. Just reheat frozen in a toaster oven or microwave!.Www@FoodAQ@Com

Wrap the pancakes in allumanim foil and put them in the freezer!. They will keep for awhile!. when you are ready to eat them, put them in the toaster or heat them on a pancake pan!. Do NOT put two on top of eachother and then wrap them!. They will stick together!.Www@FoodAQ@Com
