Question: Why does ice cream become icy after one or two scoop outs!?
Answers:
when you use ice cream and don't put it back into the freezer immediately it begins to warm!. As it warms, even if it doesn't come close to room temperature, its constituent parts separate, so instead of re freezing as ice cream, some parts just refreeze as dairy crystals!.Www@FoodAQ@Com

Water in the air condenses when it hits the cold ice cream and turns to ice!.Www@FoodAQ@Com

sounds like your freezer is too cold!.
This only ever happens to me when my ice cream has been left in the freezer for months on endWww@FoodAQ@Com
