What is the "skin" on brie? (or whatever you call it- skin/rind/whatever?)?!
That white bit- is that just all the mold and yeast grown on the exposed cheese!? ie simply the bit that goes hard because it is exposed to air!? (and hence grows more "mold" and yeast, etc!. or does it have NOTHING to do with mold and yeast!?)
would it be "safer" to eat if one was sensitive to mold & yeast, if one was sensitive to such things and wanted to eat brie anyway!? lol!

It is mold, and is referred to as rind!. Yes it is edible and its not meant to be removed when eating it!. As for someone being sensitive to mold, im not sure but it doesnt taste like mold!. It is actually placed there by the makers of the cheese!. Im not sure about the reasons why but the cheese is soft inside and it keeps it together!.

It's a mold on the outside of the cheese & it's supposed to preserve the cheese!.

it's the cheeses natural crust it is covered by a bit of mould and is meant to be eaten!. The mould has a bit of an ammonia taste, but is perfectly edible!.Www@FoodAQ@Com
its a preservative wrap to keep the cheese from drying out while its in storage and cargoed out everywhere!. you cant eat it!.Www@FoodAQ@Com
