Butter has been around a whole lot longer then the oil substitutes like margarine and "diet" margarine!. It also contains the right properties to make specific types of recipes work right!. Pastry is a great example, if you use margarine, it won't flake properly and will be "tough" textured!. If you don't like the taste, try using an extra pinch of salt in the recipe your making!.

The taste is the reason and besides margarine is only one little chemical away from being plastic so if you think plastic is good for your system then by all means go for it!. Personally I use butter in almost every hot dish I cook and eat and have done that for years, nothing better!.Www@FoodAQ@Com
