Usually because they've been in there too long!.

They usually do this when they've gone quite some time past there sell by date!. It doesn't matter whether they're in the fridge or in a cupboard they will still grow roots!.

My advice is to by some more fresh vegetables when they start to do this and make sure you eat them at least within a week past there sell by date!. After this point a lot of there nutrients will have been depleted which just defeats the object of eating the vegetable in the first place!.

Hope this helps :-)Www@FoodAQ@Com

They are dehydrating, they need a drink so they produce roots to go look for some water!.Www@FoodAQ@Com
