Ingredients: trace of lime?!
In the ingredients of tortilla chips, often you will see the ingredient, "trace of lime"!.
What is this!? Lime like the fruit!? Or lime the mineral!?
How does it get in there!.!.!. is it purposefully added!? Maybe it gets in there when they stone grind the corn, and it's mineral dust from the grinding stone!?

In this instance, Lime refers to hydrated lime that the corn kernels are soaked in to "slough" off their initial hides or skins!.!.!.!.!.!.
The hydrated lime and the skins are then rinsed away from the corn kernels and the kernels are then ready to be processed in to a variety of forms!.!.!.!.!.
In your case, Tortilla Chips are then made from the roasted, stone ground (milling process) of the corn to make it malleable for forming into a paste that will then be transformed into tortilla chips!.!.!.!.!.!.!.Now, do you have the salsa and guacamole to go with those chips, and I'll bring the Margaritas!!!!

Lime, the fruit!. Lime is used a lot in mexican cooking!. Tortilla chips would be in that category!. It is on a lot of dishes besides chips!. It enhances the taste, that is why they use on a trace!.!.!. The taste could be overpowering if used in excess!. It's used in some salsa's, guacamole, pozole(a pork and hominy soup), marinade for meat, Lime Margaritas, etc!. Cilantro is usually in most recipes with lime too!.Www@FoodAQ@Com
A pich of lime is added to the spices and when applied for large quantities of the chips and evaluated you find traces of lime!. In simple words add a pinch of salt to a bucket full(about 30 liters) of water and when a glass of this water is checked they will fins traces of salt, like this!.Www@FoodAQ@Com
